Step 1: Mull the Wine
Place all the ingredients in a large pot. Heat over low heat until it is JUST before boiling (don’t let it boil!).
Turn off the heat and allow it to infuse for 30-60 minutes.
The longer the wine cooks, the more alcohol burns off/evaporates. To make sure not too much disappears, make sure not to boil the mixture, and there’s no need to infuse the mixture overheat.
Step 2: Serve it
Strain the liquid, heat it once more until warmed through, and then serve immediately!
Serve in heat-proof jars/mugs (optionally topped with a fresh slice of orange) and enjoy!
Vin Brulé (Italian-Style Mulled Wine), a Festive Winter Drink
Around late November or early December each year, Christmas markets start to appear in piazzas all over Italy, selling handcrafted gifts and typical holiday foods and drinks such as vin brûlé, a hot, spiced mulled wine usually served in ceramic mugs. It's a mystery why a French name (literally meaning "burnt wine") is used in Italy since in France mulled wine is known as vin chaud ("hot wine"). But whatever the story behind the name, it's a warming, aromatic beverage that's lovely to sip on cold winter days. It's great to make a big potful of it for a holiday party and ladle mugfuls of it out as guests arrive–with the bonus of making your house smell wonderful and festive!
Use a full-bodied, fruity red wine for this, but do not waste a high-quality or expensive wine. Go for a cheap Merlot, Cabernet Sauvignon, Primitivo (Zinfandel), Negroamaro or Salice Salentino. A version of vin brûlé called bisò is made in the Emilia-Romagna region with Sangiovese.
This recipe is basic and simple, but feel free to add additional spices as desired (suggestions below) and adjust the sweetener to taste.
If you want to give your vin brûlé a little extra kick, you can fortify it with 2 tablespoons of spiced rum, Grand Marnier, Triple Sec, brandy, cognac, apple brandy or Calvados (a French apple brandy).
If on the other hand, you want to tone it down a bit, you can add either additional freshly squeezed orange juice or apple cider to dilute the wine a bit.

A combination of sweet, fruity, and mellow flavors, this mulled wine is a warm drink to keep you comfy during the holiday season.
- 1 cup white wine
- 2 cups red wine (Cabernet Sauvignon)
- 2 star anise
- ¼ tbsp peppercorns (whole)
- 1 bay leaf
- 1 ¼ tbsp ginger (peeled and bruised)
- lemon wedges (optional for garnish)
- cinnamon sticks (optional for garnish)
In a heated pot, add the ginger, star anise, whole peppercorns, and bay leaf.
Pour in the red and white wine and wait for the mixture to steam.
Once the mixture begins to steam, reduce it to a simmer until the wine and spices have infused.
After simmering for 20 minutes, strain the mulled wine mixture and set the spices aside.
Pour the wine into a heat-proof glass and garnish it with the leftover spices.
Serve it warm, garnish with lemon wedges and cinnamon sticks, and enjoy the holiday cheers!

- Combine ingredients. Combine all ingredients in a saucepan and give them a quick stir.
- Simmer. Heat until the wine just barely reaches a simmer over medium-high heat. (Avoid letting it bubble in any way — you don’t want to boil off the alcohol.) Reduce heat to low, cover, and let the wine simmer for at least 15 minutes or up to 3 hours.
- Strain and season. Using a fine mesh strainer, remove and discard the orange slices, cloves, cinnamon sticks, star anise and ginger. Give the mulled wine a taste, and stir in your desired amount of extra sweetener if needed.
- Serve. Serve warm in heatproof mugs, topped with your favorite garnishes.
