1. Put on the fire a pot of water (4-5 liters) in which you add 1 teaspoon with a pinch of salt.

2. In a pan, heat the oil and add the butter. When the butter melts, add all the breadcrumbs at once. Stir continuously with a wooden spoon until golden brown and begins to smell nice of the baked pie. This will take about 4-5 minutes. Note: I make dumplings with apricots (or plums) primarily for this browned breadcrumbs. I love it, I would simply eat it with a spoon and obviously I can't conceive dumplings without it. If you are not so happy with this breadcrumbs, you can roll the dumplings, at the end, with crushed biscuits, roasted and chopped walnuts or almonds, etc.

3. With wet hands, take a piece of dough, flatten it in the palm and then place half an apricot. You can also use whole apricots, but the dumplings will come out much bigger, which bothers me a bit visually. Carefully close the dough over the apricot and round it in the palms. It's really easy to make apricot dumplings, isn't it? Once shaped, place them carefully on a plate / tray / chopper greased with oil.

Note: If desired, you can put different fillings in apricots: ground walnuts mixed with sugar, apricot kernels peeled and chopped, marzipan, etc. I prefer natural dumplings and I don't want to taste anything other than fruit and browned breadcrumbs.

4. When the water boils, reduce the heat to a minimum and dip the dumplings in the pot, all at once. With a spatula, we gently detach them from the bottom of the pot, immediately after we put them to boil, but with great care, not to break them. Method of preparation:

  1. Today I present you another recipe from Cristina Ioniță's book, which impressed me even more than the previous one. The apricot tart has a fine, cheese-like taste, and the apricots form a colorful, sour and extremely aromatic contrast. You have to try it too! It's officially my favorite dessert this summer. I tried it with a mix of berries, it's a dream!

For 10 servings (total amount of carbohydrates: 40 g)

  • 4 eggs
  • 150 ml sweet cream
  • 80 g Green Sugar
  • 50 g coconut flour (55 g if the eggs are larger)
  • 50 g butter
  • 200 g apricots

Beat the eggs with the sweet cream and sweetener. Add the coconut flour, then the melted butter. The dough obtained is poured into a tart pan, greased with butter and lined on the bottom with a circle of baking paper. My shape is 24 cm in diameter. Apricots washed and peeled are evenly distributed on the surface of the tart.
Place the tart in the preheated oven at about 160 degrees C for about 45 minutes. If it browns too quickly, cover the form with baking paper.

When it is ready, the tart is left to cool, only after that it is portioned. I sprinkled it with Green Sugar powder.
