A gremolata is a classic Italian condiment consisting of finely chopped herbs (most use parsley), lemon zest, and minced garlic. Oven roasting the fish preserves its integrity, but just be careful not to overcook it.

Ingredients

For the Oven-Roasted Alaska Cod Gremolata

  • 1/3 Cup finely chopped fresh parsley
  • 3 Tablespoons olive oil
  • 4 Cloves garlic, minced
  • 2 Tablespoons lemon zest
  • 1 1/2 Tablespoon fresh lemon juice
  • 4 Alaska cod fillets (4 to 6-ounces each), fresh, thawed, or frozen
  • 1 Pound trimmed fresh asparagus or whole green beans
  • Salt and pepper, to taste

Oven Baked Cod with Gremolata Breadcrumbs

Lightly rub cod fillets with a salt on both sides. Set aside.

Step 3

In a mixing bowl, combine 3 tablespoons olive oil, dry white wine, lemon juice, and 1/4 teaspoon salt. Whisk together well. Add crushed garlic and stir well.
